Philosophy

We have taken a little step back from chasing ingredients and flavours from around the world.

Took a good look around us, and focused on our own traditions, food culture and powerful nature.

Our "story" is based upon our own grown ingredients, as well as collaborations with selected farmers and fishermen. They are mostly located in Norway, but we also look around in the whole Nordic region. There is only a handful of exceptions outside the Nordic boarders, but we strive to find good substitutes for these as we go.

We wish to create an amazing dining experience displaying the best local ingredients we can find, and combine that with the techniques from several years of cooking around the world.

Menu

The menu is a journey through our story. Told with between 16 and 20 servings in our seasonally adaptive menu. Depending on what our wonderful nature has to offer.

Drink pairing: 1495,- NOK

Non alcoholic drink pairing: 795,- NOK

We will do our very best to accommodate to all allergies, but we will unfortunately not be able to adjust to all lifestyle diets, as that might take away some essential expression to our dishes.

Bio

It was love at first sight...

For more than 18 years I have dreamt of opening this restaurant. My career started working alongside some of the the most remarkable chefs in Norway.
This experience gave me the opportunity to take part of many culinary competitions, both nationally and internationally, as well as working many years abroad. This includes working for some of the most knowledged and inspiring chefs in the world, such as Chef Thomas Keller in New York. After several years working in wonderful high end restaurants, I decided it was time to open my little dream restaurant.

Even though it has been more than 7 years since I saw the little stable for the first time, I couldn´t be more excited to finally invite you to "Stallen". (eng: "stable")
